http://www.taxidermy.com/ and look for the Breakthrough series of instruction books. Very good series and will teach you a lot. I have personally used them and thought they were great. I started it as a hobby but soon got to where it was becoming a job and took away too much of my hunting and fishing time. Good Luck.
