I saw Bill Hesselgrave at the expo. He did a session where he deboned a deer. During the session he fillet half the deer while never cutting thru a bone or joint. Seeing half the deer deboned as one piece of meat was pretty neat. He has "how to" videos on his website and has seminars throughout the year.
